Slow Cooked Apple Cinnamon Pork

I’ve gone a little bit crazy with Fall food this past week… I’m a little bit too excited for pumpkin everything, leggings, yoga pants, Uggs, crunchy leaves, puffy vests and pea coats.

So yesterday, after I spent 90 bucks on nothing but meat and fruit at the store I wanted to get something cooking in the slow cooker. I had just bought a nice plump little pork roast and a bag of Macintosh apples so I was inspired to get this bad boy brewing:

  • 2-4lb Pork Roast
  • 1 Onion
  • 2 Macintosh Apples
  • 1 tbsp Cinnamon
  • 1 tbsp Chili Powder
  • 1 tsp Nutmeg
  • 1 tsp Sea Salt
  • 1 tsp Pepper

  • Slice onion and line bottom of the crockpot
  • Slice 1 apple and place on top of onions
  • Mix spices
  • Pat pork roast dry
  • Rub pork roast well with spices
  • Place pork roast on top of onions
  • Slice other apple and place on top of and next to pork roast
  • Set slow cooker for low for 5-6 hours or high for 2.5-3 hours – I recommend low

Remove, slice, spoon some of the onions & apples on top and enjoy the Fall flavors!
